Unbelievable as it seems, the summer is coming to an end, and our kiddos are headed back to school! Meeting new teachers, buying school supplies, and gearing up for packing lunches again is upon us. Let me share with you something to be excited about!


My kids love coming home to a fun after school snack. It doesn't have to be difficult, just intentional. Letting them know you are ready for them to be home and listening as they give you the download on their day is so important. Here are some fun ideas for snacks that will bring smiles all around!



Apple Nachos

With the abundance of apples in the fall, it's always fun to have a new way to eat them. These apple "nachos" are so easy! The different topping options are endless, but I'll share one of our favorite versions. If you make a plate of these and put them in front of your family, they will be gone in minutes!




Mini Caramel Apples

These bite-size versions of a fall favorite are the perfect snack! Because they are so small, you can eat more than one, and the topping choices are limitless. One bite and you will be taken back to all of your favorite autumn-time feelings as you enjoy a crisp, tart apple covered in butterscotch or peanut butter chips, then rolled in goodies such as toffee bits, peanuts, sprinkles, or coconut. Your kiddos will love these!




S'mores Energy Bites

These energy bites taste like our best memories of summer. They are fun to pack in lunches for your kiddos, send to sports practices and games, and just keep a stash in the freezer for whenever you need a bite or after school snack. They are no bake and come together super fast. Let me warn you, they are so yummy that you may just eat the whole batch at once!




Zingy Dunked Strawberries

If you've seen the Disney movie Ratatouille, you remember the part where he is roasting a mushroom with some cheese and rosemary, then gets struck by lightning, which makes it taste out of this world, or "lightning-y". That is what I think of when I eat these strawberries because the mix of flavors is INCREDIBLE. There are no words to describe it, except some oohing and mmmming and maybe lightning-y.

Our family eats this fun snack a lot, but we don't always need 12 cups of it! This recipe is the perfect size for our family to all get our fill and enjoy. It's also the perfect size to make in the microwave!! You will be surprised how crispy it gets in the microwave, and you will love how fast you can have this snack prepped and ready to go. My kids will smell this cooking and RUN to the kitchen to munch.




Monster Cookies

Sometimes you just need a giant cookie.... one that the is loaded with M&M's, peanut butter, and oats. These flourless cookies are so easy to mix together and bake up a batch! They make the perfect after school snack with a glass of milk. You are going to love these cookies!
