S'mores Energy Bites

Do you ever need a pick-me-up at around 2 in the afternoon? Let me introduce you to these energy bites! One or two does the trick, and you won't even feel guilty about it. They are fun to pack in lunches for your kiddos, send to sports practices and games, and just keep a stash in the freezer for whenever you need a bite. They are no bake and come together super fast. Let me warn you, they are so yummy that you may just eat the whole batch at once!


 

S'mores Energy Bites

Makes 30


1 1/2 cups quick cooking oats

1/4 cup crushed gluten free graham crackers (we love Kinnikinnick Graham Style Crumbs)

1/2 cup peanut or other nut butter

1/2 cup raw honey

1/4 cup vanilla protein powder

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup mini chocolate chips

1/2 cup mini marshmallows


Combine all in a stand mixer bowl and mix until combined and starting to come together. Roll into 1-inch balls and place on a baking sheet lined with parchment paper. Place in the freezer for an hour to set, then store in a resealable bag or container in the fridge or freezer.


 

Step-by-step tutorial:


Gather your ingredients. You will need quick oats, GF graham cracker crumbs (you can crush some yourself or we love the Kinnikinnick Graham Style Crumbs), peanut butter (or any nut butter you love), vanilla protein powder, vanilla extract, salt, mini chocolate chips, and miniature marshmallows.


In a large mixing bowl, combine 1 1/2 cups oats, 1/4 cup crushed graham cracker crumbs, 1/2 cup peanut butter, 1/2 cup raw honey, and 1/4 cup vanilla protein powder.


You can use regular honey, but I do recommend raw honey. My dad and brother, and now my husband are beekeepers and so we have a wonderful supply of raw honey. It's so amazing!


Add 1 teaspoon vanilla and 1/4 teaspoon salt. Mix until combined.


It should start coming together, like cookie dough. If yours is too crumbly, add a little more nut butter.


Next add in 1/2 cup mini chocolate chips and 1/2 cup miniature marshmallows. Mix to incorporate.


Roll into 1-inch balls and place on a baking sheet lined with parchment paper. I use my smallest cookie scoop to keep them all the same size. Place in the freezer for about an hour to set.


You can store them in a resealable bag or container in the fridge. We like to keep ours in the freezer and pull out a few bites at a time. It's also good to have them frozen if you want to send them in lunches, etc.


You really can't go wrong with these energy bites! Kids and adults love them, and they give you that mid afternoon boost you need!
