S'mores Granola


My daughter found a gluten free s'mores granola she could buy at college, but they don't exist here in the east, so I decided to make my own version! Such a delicious granola for topping yogurt or eating with milk poured over it. Will definitely give you some good summer vibes!


 

S'mores Granola

Makes 8 cups


6 cups old-fashioned oats

1/2 cup brown sugar

1 cup crushed gluten free graham crackers

1/2 cup vegetable oil

1/3 cup honey

2 teaspoons vanilla

1 cup mini marshmallow bits

1 cup chopped dark chocolate


Preheat oven to 325°F. In a large mixing bowl, combine oats, brown sugar, and crushed graham crackers. In a small mixing bowl, combine oil, honey, and vanilla, whisking until combined. Pour over the oats and stir to coat. Spread onto a parchment lined baking sheet. Bake for 15 minutes, then stir. Return to oven and bake an additional 10-15 minutes or until it just starts to brown. Remove from the oven and pour over the marshmallow bits and chocolate. Put back in oven for a few minutes so the chocolate melts to the granola. Remove and DON'T STIR. Let cool completely, at least an hour, then break into pieces and store in an airtight container.


 

Step-by-step tutorial:


Gather your ingredients. You will need old fashioned oats, brown sugar, gluten free graham crackers (I used two packs of this box of Schar crackers), vegetable oil, honey, vanilla, marshmallow bits (I get them on Amazon), and a bar of dark chocolate.


In a large mixing bowl, stir together the oats, brown sugar, and crushed graham crackers. Don't crush them to dust. You still want some chunks of graham cracker.


In a separate bowl, whisk together the oil, honey, and vanilla. Pour it over the oats and stir to coat.


Spread the granola mixture onto a parchment lined baking sheet. Bake at 325°F for 15 minutes. Stir, then bake an additional 10-15 minutes or until starting to brown.


Remove from oven and top with marshmallow bits and chopped chocolate. Return to the oven for a few minutes to get the chocolate all melty so it sticks to the granola. If you'd rather, you could wait on the chocolate and stir in the chunks after it's completely cooled. You could also use mini chocolate chips.


After you remove from the oven for the last time, DO NOT STIR. You want to let the granola completely cool so that clusters can form and stick together.


Store in an airtight container and enjoy!
