Apple Nachos

With the abundance of apples in the fall, it's always fun to have a new way to use them. These apple "nachos" are an easy, but very fun way to eat your favorite apples. The different topping options are endless, but I'll share one of our favorite versions. If you make a plate of these and put them in front of your family, they will be gone in minutes!


 

Apple Nachos

Serves 6


2 large medium tart apples, cored and sliced thin

15 large marshmallows

3 tablespoons butter

1/4 cup chopped peanuts or toffee bits

1/4 cup miniature chocolate chips

2 tablespoons sprinkles

Caramel ice cream sauce


Prepare your apples, then place the slices in a bowl of cold water mixed with a teaspoon of lemon juice. Let them soak for 5 minutes, then drain and dab with paper towels. Meanwhile, in a microwavable bowl, melt the marshmallows and butter in the microwave in 30 second intervals, until completely melted and smooth when stirred. Arrange the apple slices on a large platter. Drizzle with the marshmallow sauce. Sprinkle the peanuts, chocolate chips, and sprinkles over the top. Top with a drizzle of caramel sauce and serve immediately.


 

Step-by-step tutorial:


Gather your ingredients. You will need two large apples (or 3 medium). You can use any medium tart apple or your favorite kind of apple. We love Honeycrisp as well as Granny Smith for these. You will also need large marshmallows, butter, peanuts, miniature chocolate chips, sprinkles, and ice cream caramel sauce. You can also use toffee bits in addiction to all this, or in place of the peanuts.


First, core your apples. I have a nifty tool to do this. If you don't, you can always cut the apple in half and cut out the core.


Slice the apples thinly, then place them in a bowl of cold water mixed with a teaspoon of lemon juice. This will keep them fresh, so they won't turn brown. Soak them for about 5 minutes, then drain in a strainer and lay out on paper towels to dry.


In a microwavable dish, melt 15 large marshmallows with 3 tablespoons butter. Do it on high in 30 second intervals, stirring in between until it's completely melted and smooth.


Now's the fun part! Arrange your sliced apples on a large platter.


Drizzle with the marshmallow sauce. Sprinkle on the peanuts, chocolate chips, and sprinkles. Top with a drizzle of caramel.


I don't know any kid (or adult for that matter) who would turn down a slice. Such a fun fall snack to share with friends and family. Make them for your kiddos after school and they will love you forever!
