Raspberry Jello Salad

Another delicious Jello salad from my Grandma..... this could be my favorite yet! Raspberries, bananas, pineapple, and a delicious layer of sour cream. Not only is it yummy, but it's so pretty, don't you think? It can be served all year long, but I'm thinking it would be especially pretty for a Christmas meal.

Raspberry Jello Salad

Serves 6

2 (3 oz.) packages raspberry Jello

2 cups boiling water

1 cup frozen raspberries

1 cup crushed pineapple

2 large mashed bananas

2/3 cup cold water

1 cup sour cream

Dissolve Jello in boiling water. Add frozen raspberries and stir until berries are thawed. Add pineapple, bananas, and cold water. Pour half of mixture into a 9x13-inch dish. Chill. Spread sour cream over top, then carefully pour remaining Jello over sour cream. Refrigerate until firm.

I really loved this, as did my family! It's easy to make too as long as you plan for time to chill and set. The sour cream layer adds the right amount of creaminess without any more sweetness.

Such a beautiful color too! I hope you enjoy it as much as we do!
