Pistachio Salad


For a fun side dish, give this Pistachio Salad a try. It comes together in under five minutes and is always a favorite at events with family and friends. It's a great salad to serve at holidays because of its fun green color. A little fruity, a little nutty, and super creamy!


 

Pistachio Salad

Serves 10-12


1 (16 oz.) container cottage cheese

1 small (3.4 oz.) box Jell-O Pistachio Pudding mix

1 (8 oz.) container whipped topping, thawed

I large (20 oz.) crushed pineapple, drained

2 cups miniature marshmallows, and more for topping


In a large bowl, stir together the cottage cheese, pudding mix, and whipped topping. Fold in the pineapple and marshmallows. Top with more marshmallows if desired. Keep refrigerated until serving.


 

Step-by-step tutorial:


Gather your ingredients. You will need cottage cheese (any kind will work, but we prefer the small curd), a small box of Jell-O pistachio pudding mix, a small, thawed container of whipped topping, a large can of crushed pineapple, and miniature marshmallows.


In a large mixing bowl, stir together the cottage cheese, pudding mix, and whipped topping.


Drain the crushed pineapple, pushing down with a spoon to get as much juice out as possible.


Fold in the pineapple and marshmallows.


You can serve immediately or store in the refrigerator until ready to serve. I like to top it with some extra marshmallows.


So creamy and fluffy! The light green color works well for holidays.


It only takes one bite, and you'll fall in love.
