Green Jello Salad

If you are a fan of creamy lime, this is for you! I really loved it, and it's simple to make. Don't be freaked out that you add sugar at the time of the jello. It's to sweeten everything when you add the whipped cream which is unsweetened. The name is one that gets lots of laughs and is made fun of, but you could call it something else...... maybe Lime Clouds.

Green Jello Salad

Serves 6

1 cup boiling water

1 (6 oz.) package lime gelatin

1/2 cup sugar

2 tablespoons lemon juice

1 cup crushed pineapple, undrained

1 pint whipping cream, whipped

Dissolve gelatin and sugar in boiling water. Stir in lemon juice. Refrigerate until partially set, then fold in pineapple and whipped cream. Refrigerate until firm.

This is a simple side to put together. The only thing you need is some time for it to set. I don't think there is a kid out there who wouldn't gobble this up.

So light and fluffy, like a cloud. The lime flavor is very distinct and yummy. Enjoy!
