Blueberry Banana Protein Pancakes


If you are trying to eat a little healthier this year, or even if you're not, these Blueberry Banana Protein Pancakes are going to make you feel great! Naturally gluten free and made with oats, eggs, and vanilla protein powder, these really hit the spot in the morning and start your day out right. They are studded with fresh blueberries throughout and have the perfect amount of banana and vanilla flavor. Kids love them! We top them with a drizzle of pure maple syrup and some extra blueberries. Definitely a breakfast of champions!


 

Blueberry Banana Protein Pancakes

Makes 18 pancakes


2 cups old-fashioned oats

2 medium ripe bananas

4 large eggs

4 large egg whites

1 teaspoon baking soda

1 1/3 cups vanilla protein powder

1/2 cup milk

1 cup blueberries

Pure maple syrup for topping

Additional blueberries for topping


In a blender, add the oats, bananas, eggs, egg whites, baking soda, protein powder, and milk. Blend until smooth. Add the blueberries and pulse a few times to blend in. In a heated nonstick pan or griddle lightly sprayed with nonstick cooking spray, pour in the pancake batter. Cook for a few minutes until bubbles start to appear, then flip and cook the other side until golden brown and center is cooked through. Serve immediately with hot maple syrup and additional blueberries, if desired.


 

Step-by-step instructions:


Gather your ingredients. You will need old-fashioned oats, 2 ripe bananas, 8 eggs, baking soda, vanilla protein powder, milk of choice, and blueberries. We love Pure Protein Vanilla Cream. We put it in smoothies all the time! It's delicious and you can find it at Walmart.


In a blender, add 2 cups oats, 2 ripe bananas, 4 eggs, 4 egg whites, and 1 teaspoon baking soda.


Next add 1 1/3 cups vanilla protein powder, and 1/2 cup milk. Blend until completely smooth. Pour in 1 cup of fresh blueberries and pulse just a few times to incorporate.


On a hot and lightly greased skillet, pour your pancake batter. Let them cook for a few minutes or until bubbles start forming.


Flip the pancakes and cook the other side until golden brown.


Serve immediately with hot pure maple syrup and some extra blueberries. It is such a delicious and protein packed breakfast. You will feel full of energy your entire morning!


I like to freeze any extras and eat them throughout the week. I just pop them in the toaster. The texture and flavor of these pancakes is amazing. You are going to love them!!!
