Yogurt Parmesan Baked Chicken Strips

These chicken strips are AMAZING. A recipe from my mom, they have been a family favorite for as long as I can remember. Thanks to Lance's crackers that act and taste similar to Ritz crackers, we have been loving this recipe again! They make a delightful main course for any meal, but can easily be served with a side of spaghetti or other pasta. You'll definitely want to give this one a try!

Yogurt Parmesan Baked Chicken

Serves 6


2 cups crushed GF crackers (our preference is Lance's Gluten Free Original Baked Crackers - the original recipe uses Ritz crackers)

2 tablespoons shredded Parmesan cheese

1 teaspoon garlic salt

1 teaspoon seasoned salt

12-14 chicken breast tenderloins (or 6 chicken breasts)

1 cup plain yogurt

1/4 cup melted butter


In a shallow bowl, combine the crushed crackers, Parmesan cheese, garlic salt, and seasoned salt. Put the yogurt in another shallow bowl. Grease a 9x13" baking dish. One by one, dip the chicken tenderloins into the yogurt, then coat with the cracker/cheese mixture. Arrange the chicken strips in the baking dish. Drizzle it all with melted butter. Bake at 350°F for 45 minutes, or until chicken juices run clear and it starts to brown.


Step-by-step tutorial:


Gather your ingredients. You will need a box of Lance's Baked Original Gluten Free Crackers (you can find them on Amazon here) or other favorite crackers, shredded Parmesan cheese, garlic salt, seasoned salt, 12-14 chicken tenderloins, plain yogurt, and butter.

In a quart sized resealable bag, crush the crackers with a meat mallet or rolling pin into crumbs. You'll need around 2 cups crushed crackers (doesn't have to be exact).

In a shallow bowl, combine the crushed crackers, 2 tablespoons shredded Parmesan cheese, 1 teaspoon garlic salt, and 1 teaspoon seasoned salt.

Set up a prep station with the chicken tenderloins (dry off with paper towels), another shallow bowl with 1 cup plain yogurt, and the bowl of the cracker mixture. One by one, dip the chicken strips in the yogurt, covering both sides, then coat in the cracker mixture.

Place the chicken strips in a greased 9x13" baking dish. Drizzle the 1/4 cup melted butter over all the chicken strips.

Bake the chicken in a preheated 350°F oven for about 45 minutes or until chicken juices run clear and it is starting to brown.

These little strips are just so tasty! You are going to love the buttery, cheesy coating they have! Serve with your favorite spaghetti or pasta, spaghetti squash with marinara, or with any other side dishes. It is sure to become a new favorite!
