Triple Vanilla Blondies


When your friend gives you homemade vanilla to shake and let infuse for a year (all through the pandemic) and it's time to try it out, you make something where vanilla is the star! These Triple Vanilla Blondies have lots of vanilla flavor in both the chewy white chocolate bars and the fluffy vanilla frosting. So delicious and sharable, you'll forget about chocolate for just a moment to enjoy these as they deserve to be enjoyed.


 

Triple Vanilla Blondies

Makes a 9X13" pan


1/2 cup butter

1 (12 oz.) bag white chocolate chips

1 1/4 cups 1:1 gluten free flour (I used Bob's Red Mill 1:1)

3/4 cup sugar

1 teaspoon vanilla

1/4 teaspoon salt

3 eggs


Vanilla frosting:

6 tablespoons butter, softened

3 cups powdered sugar

3 tablespoons milk

1 teaspoon vanilla

1/2 teaspoon almond extract


Preheat oven to 350°F. Spray a 9X13" baking dish with cooking spray or line with parchment or nonstick foil. In a medium saucepan, melt 1/2 cup butter and white chocolate chips over low heat, stirring frequently. Remove from the heat; it will appear a little lumpy. Stir in the flour, sugar, vanilla, salt, and eggs until well blended. Spread the mixture evenly into the pan. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean. Cool. For the frosting, beat all of the ingredients together until smooth and fluffy. You can add more milk if needed. Spread over cooled bars.


 

Step-by-step tutorial:


Let's start with the blondies. Gather your ingredients. You will need a stick of butter, a bag of white chocolate chips, gluten free flour, sugar, vanilla, salt, and eggs.


In a saucepan, melt the butter and white chocolate chips together over low heat, stirring frequently. Once melted, it won't be super smooth, and that's ok. Remove from the heat and add 3/4 cup sugar and 3 eggs. Stir until combined.


Add 1 1/4 cups GF flour, 1/4 teaspoon salt, and 1 teaspoon vanilla. Whisk until you get a smooth batter.


Pour the batter into a well-greased 9X13" dish. Bake at 350°F for 20-25 minutes.


It browns a little, and make sure the center is set. It makes a nice thin crispy topping just like brownies! Cool completely before frosting.


For the frosting, combine 6 tablespoons softened butter, 3 cups powdered sugar, 3 tablespoons milk, 1 teaspoon vanilla, and 1/2 teaspoon almond extract in a mixing bowl.


The vanilla really shines in the frosting, so use your best vanilla! It's worth it here.


Beat until light and fluffy! This frosting is easy to spread and work with. Once the blondies are cool, spread with the frosting. Cut and serve. You can also store in the refrigerator.


This is my homemade vanilla I mentioned that I've been so excited to use!! It tastes amazing...... waiting that whole year (even through Covid!) was so worth it.
