Spicy Zucchini Bars


My new love are these bars! They are so flavorful and moist, and the cream cheese frosting is incredible on top. The spices are perfect, and since there is zucchini in these, they total count as a vegetable, right? They are going to be on repeat this summer when zucchinis are in abundance!


 

Spicy Zucchini Bars

Serves 9


3/4 cup packed brown sugar

1/4 cup butter, softened

1 egg

1 teaspoon vanilla

1 cup gluten free 1:1 flour

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/8 teaspoon cloves

3/4 cup shredded zucchini

1/2 cup golden raisins


CREAM CHEESE FROSTING:

3 oz. cream cheese, softened

6 tablespoons butter, softened

1 teaspoon vanilla

2 cups powdered sugar


Heat oven to 350° F. Grease an 8x8-inch baking pan. Cream together brown sugar and butter in a mixing bowl. Add egg and vanilla and beat well. Stir in flour, soda, and spices. Stir in zucchini and raisins. Spread into pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool. Prepare frosting by mixing cream cheese, butter, and vanilla. Gradually add powdered sugar until a smooth consistency. Spread on cooled bars. Cut into bars.


 

I love desserts with zucchini. They tend to be moister and have such great flavor. These bars are more like cake, but we will keep them named bars for Grandma. I actually halved her bar recipe but kept the frosting the same. I like more frosting on things, I guess.
