This delicious meal was introduced to me by my husband's family. Not a huge fan of sauerkraut, I was skeptical, but it immediately became a favorite! There is something about cooking sauerkraut all day in the slow cooker with a good cut of meat that transforms it into amazing flavor and texture. This recipe couldn't be any easier, but anyone I share it with raves about it and wants the recipe. It's a perfect Sunday dinner that smells great all day while it's cooking!
Sauerkraut Pork Roast
Serves 6-8
1 jumbo can (27 oz.) sauerkraut
1 pork tenderloin or pork loin roast
salt and pepper
In a slow cooker, add the pork roast. Pour sauerkraut (undrained) over roast. Season generously with salt and pepper. Fill the sauerkraut can with water. Pour the water around the roast. Cook on low for 8-10 hours or high for 5-6 hours. Shred pork and serve with mashed potatoes. Top all with cooked sauerkraut and juices from slow cooker.
Step-by-step tutorial:
Gather your ingredients. You will need a pork loin roast and a jumbo can of sauerkraut.
Add the pork to the slow cooker. Cover with entire can of sauerkraut. Season generously with salt and pepper.
Fill the sauerkraut can with water and pour the water around the roast.
Put on lid and cook on low for 8-10 hours or high for 5-6 hours.
Shred the pork and serve with mashed potatoes. Top both with cooked sauerkraut and juices from the slow cooker. It's so amazingly delicious!
