Queso


While living in Virginia, we've had to find some new Mexican food spots to eat out at since we were spoiled while living in California for 8 years. Being near the border there, we had the best authentic food you could get! We still haven't found anything to compare, but we do love Moe's Southwest Grill, and mostly for their amazing queso!! White and creamy with green chilies and just a little heat..... it's very addicting and we can put down a bowl of it fairly quickly. After researching and doing my own tweaking, we think this recipe comes pretty close to Moe's queso. It's simple and always the perfect consistency. So dip away!


 

Queso

Makes 2 cups


1/2 pound white American cheese, cut into cubes

1/3 cup milk

1/4 cup water

2 oz. diced green chilies (1/2 of a 4 oz. can)

1 - 2 oz. diced jalapeno peppers

1/2 teaspoon salt


In a microwavable bowl, combine the cheese, milk, and water. Microwave on high for 2-4 minutes, whisking every minute, until smooth. Stir in remaining ingredients. Serve immediately with tortilla chips.

 

Step-by-step tutorial:


Gather your ingredients. You will need 1/2 pound white American cheese which you can find at your local supermarket deli. I ask for it sliced thick, then cut the slices into squares. You will also need milk, water, a can of diced green chilies, a can of diced jalapeno peppers, and salt.


In a glass 2-cup measuring cup, combine the cubed cheese with 1/3 cup milk and 1/4 cup water.


Microwave on high for about 2-4 minutes, whisking every minute, until smooth and cheese is completely melted.


Add 1/2 can chopped green chilies and 1/3 can chopped jalapeno peppers. You can do more or less of any of these depending on your tastes. My kids can dip all the chips without getting a single "green" thing on their chip. It gives the cheese great flavor though. Add 1/2 teaspoon salt, or more to taste.


Serve immediately with your favorite tortilla chips! Don't you love this cute bowl and spoon? My best friend Jenny got them for me one birthday. So fun!


This queso is creamy, mild, and such a wonderful consistency. It doubles easily for a crowd, and saves well to be reheated the next day. Especially if you don't have a Moe's near you, you need to give this a try!
