Peeps Crispy Treats

I wondered what crispy treats would be like if I made them with peeps instead of regular marshmallows. Can I just tell you...... they are absolutely incredible! The flavor is the taste of Peeps and the colors are so fun. I made mine with four colors and four layers and I think they turned out so cute!

Peeps Crispy Treats

Makes an 11X7-inch pan

4 (3 oz.) packages Peeps marshmallows (4 different colors)

1/2 cup butter

12 cups gluten free crispy rice cereal

Pastel food coloring, optional

Line an 11x7-inch baking dish with foil and spray with nonstick spray. Place one package Peeps and 2 tablespoons butter in separate microwavable bowls. One at a time, microwave for 1 minute, then stir until smooth. Add additional food coloring if desired. Add 3 cups crispy rice cereal and stir to coat. Press into prepared pan. Repeat with all the colors, layering each on top of the other. Let set and then cut into squares.

Step-by-step tutorial:

The ingredients for these treats are very basic. You need a gluten free crispy rice cereal, 4 packages of peeps, and a stick of butter.

Doing one layer at a time, place a package of Peeps and 2 tablespoons butter into a microwavable bowl. I used my 8 cup Pyrex, and just re-used it for each color.

Microwave for 1 minute, then stir until smooth. You can add a few drops of pastel food coloring if you'd like your colors more vibrant. I did for these. Add 3 cups of cereal to the marshmallow mixture and stir to coat all. Press into a foil-lined and greased 11x7-inch dish. You could also do a 9x13-inch dish if you'd like. The layers will just be very thin.

Continue with each color, placing layers on each other and pressing down. Allow to cool and set before cutting.

I cut half of them into smaller slices so I could take them to share with my choir group I'm singing with for Easter. They absolutely loved them. It makes such a pretty plate.

The other half I cut into squares. I wish they lasted longer, but they got eaten so fast!

We've always been Peep fans, so this was a fun discovery. My husband especially loves them, but he likes them stale, so he puts some holes in the packaging and waits a few days before eating them. Haha.

With Peeps in abundance in the stores right now, you really need to give this a try! We may never do rice crispy treats with regular marshmallows again!
