Peanut Butter Chocolate Chippers

This recipe has been our go-to for at least a decade. It is naturally gluten free, so no crazy ingredients needed! With a glass of milk, these cookies warm from the oven make the perfect after-school snack. I hope it becomes a favorite in your home as well!


 

Peanut Butter Chocolate Chippers

Makes 2 dozen cookies


1 cup creamy peanut butter

1 cup packed light brown sugar

1 egg

1 tsp. vanilla

3/4 tsp. baking soda

3/4 cup milk or semi-sweet chocolate chips

Sparkling coarse sugar (optional)


Preheat oven to 350° F. Combine the peanut butter, brown sugar, egg, vanilla, and baking soda in mixing bowl. Add the chocolate chips and mix well. Drop by heaping tablespoons onto an ungreased cookie sheet. Using a fork, press a criss-cross pattern onto each cookie, flattening to 1/2-inch thickness. Sprinkle with sparkling sugar. Bake for 9-11 minutes or until just beginning to brown. Allow cookies to stand on cookie sheet for a few minutes before removing them to a cooling rack. Enjoy warm or let cool completely.


 

Step by Step tutorial:


The cookie dough is made with only five ingredients. To begin, combine the peanut butter, brown sugar, egg, vanilla, and baking soda in a mixing bowl.


Mix until creamed and combined.

Add the chocolate chips.


Scoop onto cookie sheet (about 2 tablespoons of cookie dough per cookie). Using a fork, press a criss-cross pattern into each cookie, flattening the dough to about 1/2-inch thickness.


Sprinkle each cookie with sparkling coarse sugar if desired. It adds a little fun crunch on top and looks pretty!


Bake the cookies at 350° F for 9-11 minutes or until just starting to brown.


When the cookies come out of the oven, allow them to cool for a few minutes on the pan before moving them to a cooling rack.


Repeat with remaining dough. This recipe makes about 2 dozen cookies (unless you can't stop eating the dough like me, then you'll get around 1 1/2 dozen).


Grab a glass of cold milk and enjoy!!
