Patriotic Fruit Pizza


Do you want to celebrate the 4th of July with a dessert that will be a real showstopper? This fruit pizza is so much fun to make and eat. With a gluten free sugar cookie crust, fresh berries, and a delicious cream filling, everyone will want a slice! I love desserts that use fruit in season, and that is berries right now for us. This would definitely be a grand finale to any 4th of July BBQ!


 

Patriotic Fruit Pizza

Serves 10-12


1 box gluten free sugar cookie mix (we love Kinnikinnick)

1 (8 oz.) package cream cheese, softened

2/3 cup sugar

1 teaspoon vanilla

1 (8 oz.) container whipped topping, thawed

3 cups fresh raspberries

1-pint fresh blueberries


Prepare sugar cookie dough according to package instructions. Reserve about 1/2 cup dough. On a 12-inch pizza pan lined with parchment paper, press and roll the remaining cookie dough into a circle that fills the pan. You want the dough to be about 1/4-inch thick. Bake the cookie crust at 375°F for 11-12 minutes until lightly browned. Cool completely. With the reserved dough, roll out and cut small stars. Bake for about 10 minutes or until starting to brown.


In a large mixing bowl, beat cream cheese, sugar and vanilla together until smooth. Beat in half of the whipped topping. Fold in the remaining whipped topping.


Using the parchment, carefully slide the cooled cookie crust onto a serving platter. Scoop about 1/2 of the cream cheese mixture onto the cooled cookie crust. Spread it all the way to the edges. Place blueberries around the entire parameter of the circle. Create the blue part of the flag in the upper right with blueberries. Place raspberries in 7 evenly spaced stripes. Scoop the remaining cream cheese mixture into a piping bag and using a large star tip, pipe white striped between each raspberry stripe. Place star cookies on blueberry section. Refrigerate until ready to serve.


 

Step-by-step tutorial:


Gather your ingredients. You will need a box of gluten free sugar cookie mix. We love the Kinnikinnick brand. You can also make your favorite sugar cookie dough recipe if you prefer. You will also need an 8-ounce cream cheese, 8-ounce frozen whipped topping (thawed), sugar, vanilla, blueberries, and raspberries.


Prepare the sugar cookie dough and spread out on a parchment lined pizza pan. Press and/or roll it out to be about 1/4-inch thick.


Reserve some of the cookie dough and cut small stars to bake.


Bake at 375°F for 11-12 minutes or until starting to brown and done in the center. Let cool completely, then move from the parchment onto a serving plate.


Bake the cookies for about 10 minutes or until lightly brown. Cool and set aside.


To make the cream filling, in a large mixing bowl, combine the cream cheese, sugar, and vanilla. Beat until smooth. Add half of the whipped topping and beat until smooth. Fold in the remaining whipped topping.


Spread about 1/2 of the cream cheese mixture to the edges of the cookie crust.


Using blueberries and raspberries, design to look like an American flag with 7 raspberries stripes. Place remaining cream filling into a piping bag. Using a large star tip, pipe the white stripes in between the raspberry stripes. Lastly, place some of the star cookies on the blueberry section.


Fresh berries, delicious cream, and sugar cookies make a star-spangled combination!


Refrigerate until ready to serve, then slice it like a pizza.
