This is one of my go-to easy recipes for pork. My kids have always loved it through all age stages, being kid friendly but also sophisticated enough for adults. It's prepared in under 30 minutes and has such a great flavor and texture. Pork schnitzel is a popular German food, so you may have had something similar before. We really love the honey-lemon glaze this recipe makes. Served with some roasted potatoes, this meal is filling and satisfying!
Honey Lemon Pork Schnitzel
6-8 pork loin chops, boneless
1 teaspoon salt
1 teaspoon pepper
4 tablespoons cornstarch
3 tablespoons butter
1/2 cup lemon juice
1/2 cup honey
Prepare pork chops by placing between 2 sheets of plastic wrap. Pound with a meat mallet until tender and thin. In a large resealable bag, combine salt, pepper, and cornstarch. Add pork chops, two at a time, and shake to coat. Place coated chops on a plate and set aside. In a glass measuring cup, combine the lemon juice and honey. In a large skillet, melt butter over medium heat. Add the pork chops and cook about 3-4 minutes per side, or until browned and juices run clear. Remove pork. Add honey/lemon mixture to skillet and cook and stir until starting to thicken. Return pork to skillet and simmer on low for 10 minutes, letting glaze get thicker and coat the chops.
Gather your ingredients. You will need boneless pork loin chops, salt and pepper, cornstarch, butter, lemon juice, and honey. Simple!
Place the pork pieces between 2 sheets of plastic wrap. I cut mine in half.
Using a meat mallet, pound the pork chops until tenderized and thin. This is a great trick with pork, which can normally be a more tough meat.
In a large resealable bag, combine 4 tablespoons cornstarch with 1 teaspoon of each salt and pepper. Toss in two pork pieces at a time, seal bag, and shake to coat.
Repeat with all the pork, placing them on a plate after coating. Set aside.
In a glass measuring cup, pour 1/2 cup lemon juice and 1/2 cup honey. Whisk until combined.
Heat 3 tablespoons butter in a large skillet over medium heat. Add pork chops and cook for about 3-4 minutes per side, or until browned and juices run clear. Remove pork from pan and set aside, keeping warm.
Pour the lemon/honey mixture into the pan and stir, getting those browned pork bits and remaining butter combined. Let this mixture boil for a few minutes.
Put pork chops back into sauce and simmer on low for 10 minutes to let glaze get thickened and coat the pork. Turn pork pieces several times.
This will be a new favorite way to cook pork! It is extremely easy and fast, and tasty.
It is quite versatile, but we love to serve it with roasted potatoes. Enjoy!
