Hawaiian Island Surfer Smoothie

We all wish we could be on a beach in Hawaii, laying back in a chair under a palm tree, watching the surfers, and sipping a cold beverage..... now back to reality. But, I've got a smoothie here that will take you away to that very place in your mind as you sip it! We love this smoothie all summer long. Just add a small umbrella and you'll feel like you're on vacation!


Hawaiian Island Surfer Smoothie

Serves 4


2 cups crushed ice

4 oz. (1/3 can) frozen orange juice concentrate

4 oz. (1/3 can) frozen pineapple juice concentrate

1 cup water

1 1/2 cups vanilla ice cream

1/2 teaspoon coconut extract


Add all ingredients to a blender. Pulse a few times, then blend until smooth. Serve immediately.


Step-by-step tutorial:


Gather your ingredients. You will need vanilla ice cream, orange juice concentrate, pineapple juice concentrate, coconut extract, crushed ice and water (not pictured).

In a blender, add 2 cups crushed ice, 1 cup water, 4 oz. orange juice concentrate, 4 oz. pineapple juice concentrate, 1 1/2 cups vanilla ice cream (I just eyeball it), and 1/2 teaspoon coconut extract. Blend until smooth and ice is completely crushed.

Serve immediately with little umbrellas.

I love how tropical fruits like pineapple and mango can instantly lift your mood and make you feel like you’re on a mini vacation.
