Grilled Lime Chicken with Melon Salsa


As much as I love fall and am super excited for all the recipes with pumpkin and apples, we are still having gorgeous summer weather and grilling. This is another great grilled chicken recipe with an awesome marinade and even more scrumptious salsa. Fresh, healthy, and fast! All things busy families need in a meal, and you will love the flavors in this dish!


 

Grilled Lime Chicken with Melon Salsa

Serves 4


Chicken and Marinade:

1 lb. boneless chicken tenderloins

1/2 cup lime juice (about 4 limes)

2 tablespoons red wine vinegar

1 tablespoon minced garlic

2 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper


Salsa:

1 1/2 cups melon, cubed (honeydew, cantaloupe, or combination of both)

1/3 cup cucumber, peeled, seeded, and diced

1/3 cup onion, diced

1/2 large jalapeño, seeded and diced

3 tablespoons finely chopped fresh mint leaves

Zest of 1 lime

Juice of 1 lime

1 teaspoon sugar

Salt and pepper to taste


Place the chicken in a large sealable bag. Whisk together the remaining marinade ingredients and pour over the chicken. Seal and and marinate in the refrigerator for at least 4 hours or overnight. An hour before serving, combine the salsa ingredients and refrigerate to combine flavors. To grill the chicken, preheat grill to medium heat. Cook over heat about 7 minutes per side or until done. Serve chicken topped with salsa.


 

Step-by-step tutorial:


Gather your ingredients for the chicken and marinade. You will need a pound of chicken tenderloins, lime juice, red wine vinegar, olive oil, minced garlic, and salt and pepper.


Whisk together the marinade ingredients.


Place the chicken in a large resealable bag and pour the marinade over the chicken. Seal and refrigerate for at least 4 hours and up to overnight (I usually don't do tenderloins overnight because they are so small and don't need very long to get the flavor and juiciness from the marinade).


An hour before serving, gather your salsa ingredients. You will need a melon (honeydew, cantaloupe, or combination of the two), a cucumber, an onion (can be a red onion - very pretty and yummy), a jalapeño pepper, a lime, and fresh mint leaves.


This time I found a different delicious melon to try. It was called Sugar Kiss, but was similar to a cantaloupe, only juicier and sweeter. We really loved it, and I highly recommend trying it if your store carries something like this. I also love the yellow honeydews.


In a bowl, combine the salsa ingredients. Seed and dice the melon. Peel, seed, and dice the cucumber.


Dice the onion and jalapeño pepper. Mince the mint leaves.


Add the zest from the entire lime, then squeeze the juice of the lime over the salsa.


Stir to combine, then refrigerate until serving.


Grill the marinated chicken over medium heat for about 7 minutes per side or until done.


This salsa is fabulous! Not only is it pretty, but the flavors work so well together!


Alongside the grilled lime chicken, it's the perfect meal. This chicken is moist and full of flavor.


You can feel good about serving this to your family and friends. We love it served with Elote Corn and extra melon balls. It's fresh and delicious, and you will wish you doubled the salsa!
