Grandma's Pudding Bars


Talk about an easy recipe that turned out so yummy! These pudding bars are simply made by combining a cake mix batter with a prepared instant pudding, then adding a bag of chocolate chips. Bake it in a half sheet pan, then slice and share. So fudgy, but still cake. You can make it with any flavor pudding or cake mix, as well as different chips like white chocolate, peanut butter, or butterscotch, to create unique bar flavors.


 

Pudding Bars

Makes 40 bars


1 (4 oz.) box instant pudding mix (any flavor)

Milk

1 box gluten free chocolate cake mix (9x13" size) (I used Krusteaz)

Ingredients to make cake mix

1 (12 oz.) bag chocolate chips


Prepare pudding using directions on box. In separate bowl, prepare cake mix using directions on box. Combine the pudding and cake batter and mix well. Stir in chocolate chips. Pour into a greased half sheet pan. Bake at 350° F for 30-35 minutes. Cut into bars.


 

I am so excited about this recipe because of all the possibilities! For this first batch, I used a Krusteaz GF chocolate cake mix and a cheesecake Jello pudding mix. Be sure your cake mix is for a 9x13" cake. I've made recipes that have me add a box of pudding mix to the cake mix like this Chocolate Bundt Cake, but this is the first time I've prepared the pudding, then added it. It made such a moist cake! And of course, the addition of chocolate chips makes it gooey and fudgy.

I can't wait to experiment with different pudding flavors as well as cake mixes. This combo was pretty much perfect through. They are so fast to whip up and bake, and make a ton, so it's perfect to take to gatherings or share with friends and neighbors.
