Potato Chip Chicken Strips

Kids love chicken nuggets, fingers, name it! I, myself, am in love with the nuggets at Chick-fil-A because they actually look and taste like chicken, and these are similar to their strips. But instead of a breading, you dip them in crushed potato chips - the flavors could be endless! Baked instead of fried, you will feel good about making these for your family. We love dipping them in homemade ranch dressing. It's on the

table in less than 30 minutes! Your kiddos are guaranteed to love them.


Potato Chip Chicken Strips

Serves 4

4 lbs. chicken tenderloins

8 oz. potato chips, any type (plain, sour cream and onion, barbecue, dill pickle, etc.)

1 egg

2 tablespoons milk

Preheat oven to 400°F. Pour potato chips into a gallon-size resealable bag. Using a meat mallet, crush the chips into bits. In a shallow dish, beat egg with milk. Dip each chicken tender into the egg, then throw into the bag with the crushed chips. After you have about 3 in the bag, seal and shake to coat. Place on ungreased baking pan. Repeat using all the chicken. Bake for 20-25 minutes, flipping halfway through. Serve with favorite dipping sauces.


Step-by-step tutorial:

Gather your ingredients. You will need a package of chicken tenderloins, a bag of potato chips (any flavor that sounds delicious to you), an egg, and some milk.

Pour potato chips into a resealable bag. Using a meat mallet, crush the chips to small pieces.

They don't have to be crumbs, but you want them small enough to stick like a breading.

In a shallow dish, beat together the egg and 2 tablespoons milk. This will be our first coating on the chicken.

Set up a chicken-strip-making line. You will dip the chicken tenderloin in the egg, then throw it in the bag. After you do three strips, seal the bag and shake until the chicken pieces are coated. Remove and put on a prepared baking sheet. I cover mine with non-stick foil for easy cleanup. Repeat the process for all the chicken tenderloins.

You can sprinkle some of the chips left in the bag on top if any pieces look a little bare. Bake at 400°F for 20-25 minutes, or until chicken juices run clear and the chips start to brown. Flip the chicken halfway through.

Serve the strips with ranch dressing, barbecue sauce, salsa, sweet-and-sour sauce.....whatever you like!

It will be a fast and LOVED family dinner you will come back to again and again!
