Pasta Primavera Alfredo

A quick delicious dinner in under 30 minutes! The simple Alfredo sauce along with fresh spring vegetables (did you know that's what "primavera" means?) come together over spaghetti noodles and make you look like a chef! Top with some extra Parmesan cheese and serve alongside a salad, and you've got a delicious dinner on the table before your kiddos can start whining "MOOOOOOM......what's for dinner?!"


Pasta Primavera Alfredo

Serves 4


3/4 lb. gluten free spaghetti noodles

2 cups broccoli florets

2 carrots, thinly sliced

5 mushrooms, sliced thin, optional

1/4 cup butter

4 oz. cream cheese, cubed and softened

1 cup milk

1/3 cup grated Parmesan cheese

1/2 teaspoon garlic powder


Cook spaghetti according to package directions, drain. Place vegetables in a microwavable bowl and add a few tablespoons water. Cover loosely with plastic wrap and microwave on high for 3 minutes, or until tender. In a saucepan, melt butter and cream cheese together over medium low heat, stirring to combine. Add milk, grated Parmesan, and garlic powder. Stir until well blended and creamy. Pour over cooked spaghetti and vegetables. Toss to coat. Serve immediately. Top with extra Parmesan cheese, if desired.


Step-by-step tutorial:


Gather your ingredients. You will need gluten free spaghetti noodles, broccoli florets, carrots, cream cheese, milk, Parmesan cheese, butter, and garlic powder. Cook the spaghetti according to package directions.

In a bowl add fresh vegetables with a few tablespoons water. You can use whatever vegetables you love. Broccoli, carrots, mushrooms, asparagus, whatever sounds good! Cover with plastic wrap and microwave on high for 3 minutes or until tender. You can use frozen vegetables if you desire, but the fresh vegetables taste better. Set aside.

In a saucepan melt 1/4 cup butter and 4 oz. cream cheese over medium-low heat.

After it's mostly melted and combined, add 1 cup milk, 1/3 cup grated Parmesan cheese, and 1/2 teaspoon garlic powder.

Continue stirring over heat until everything is well blended and creamy.

Combine the cooked spaghetti and vegetables. Pour sauce over all and toss to coat.

You are going to love this Alfredo sauce!

Serve alongside a salad (my kids love Caesar) and sprinkle with extra Parmesan cheese.
