Cherry Cheesecake Cookies


My all time favorite dessert in cookie form, right here! These are such a fun cookie to make anytime of year, but I think they are especially pretty at Christmas. The soft cookie has cream cheese in the dough, then you roll the dough balls in graham cracker crumbs, bake, and top with some cherry pie filling. Easy, but so loved!


 

Cherry Cheesecake Cookies

Makes 2 dozen


1/2 cup butter, softened

3 oz. cream cheese, softened

1 egg, seperated

1 teaspoon vanilla

1 teaspoon lemon zest

1/4 teaspoon salt

1 cup powdered sugar

1 cup 1:1 gluten free flour (I use Bob's Red Mill 1:1)

1 cup gluten free graham cracker crumbs

1 (20 oz.) can cherry pie filling


In a medium bowl, cream together butter, cream cheese, egg yolk, vanilla, lemon zest, and salt until light and fluffy. Gradually mix in powdered sugar and flour to make a stiff dough. Cover the bowl with plastic wrap and refrigerate for about 2 hours to chill. After it is chilled, preheat oven to 325°F. In a shallow bowl, beat the egg white until frothy. Put graham cracker crumbs in another shallow bowl. Shape dough into 1-inch balls, then dip in the egg white and roll in the crumbs to cover. Arrange on a cookie sheet covered with parchment. Using your thumb, make an indent in the top of each cookie. Bake for 12-15 minutes or until set. After removing from the oven, take the end of a wooden spoon and re-do the indent to make sure there is a well for the cherries. After cooling a few minutes on the pan, move to a cooling rack to cool completely. Fill each hole with cherry pie filling.


 

I was so excited when I found this recipe and couldn't wait to try them! I first made them for a party we had at our house where we sang carols and then had these cookies and wassail. They were a huge hit! There was only one little boy who decided he only liked the cherries, so instead of him eating them off of several cookies, I put a bunch of extra cherry pie filling on a plate, handed him a fork, and he was in heaven! Haha.


They aren't huge cookies, so being bite-size, I opted to just put one cherry on each cookie. You can definitely put more if you like.


The perfect cookie bite in my opinion!


You will want to make these cookies ASAP! They are on my list of favorite cookies for sure!
