Don't you just love the smell of banana bread baking? It makes me so happy. I actually get excited when we don't keep up with our banana purchases and several get overripe! There are so many great recipes out there that use ripe bananas, and this is one you'll want to try! The buttermilk is the secret ingredient that keeps it super moist and delicious.
Buttermilk Banana Bread
1/2 cup butter, softened
1 1/2 cups sugar
1 cup mashed bananas (about 2-3 ripe bananas)
4 tablespoons buttermilk
1/2 teaspoon vanilla
1 3/4 cups GF flour (I use Bob's Red Mill 1:1 flour)
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
Grease a large loaf pan (9 1/4 X 5 1/4-inch). In a large bowl, cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla until the batter is well mixed. Add in the flour, baking powder, salt and soda. Mix until well combined. Pour batter into prepared pan and bake at 350 degrees for 55-60 minutes or until a toothpick comes out clean.
This is one of those recipes that is so easy, you will almost have it memorized after making it several times. No crazy skills required! Basically, put everything together and mix, bake, and eat.
Gather your ingredients together. You're going to need a stick of butter, sugar, 2 eggs,
2-3 ripe bananas, buttermilk (if you don't have this, simply make your own by adding a small amount of lemon juice to regular milk in the amount asked for), vanilla (I've used up all my good vanilla and now have to use imitation thanks to crazy prices!), GF flour of choice (just be sure it has xanthan gum in it; if not, add 1 tsp), baking powder, salt, and baking soda.
In a mixing bowl, cream together the softened butter and sugar. Add the two eggs and mix until incorporated. Now, here's where I get really lazy..... but it totally works with a kitchenaid mixer! Just throw in those bananas broken into chunks. No need to mash separately unless you really enjoy dirtying another bowl. ;)
Add the 4 tablespoons buttermilk and 1/2 teaspoon vanilla. Mix well. Next comes the flour. Be sure you are careful in measuring your flour. Don't pack it into the cup. Lightly scoop, then take a knife and go across the cup, evening it out. Add 1 teaspoon baking powder, 1/2 teaspoon salt, and lastly, 1/8 teaspoon baking soda. Mix well until the batter is smooth and the dry ingredients are incorporated.
Pour the batter into your prepared loaf pan.
Bake at 350°F for 55-60 minutes or until toothpick inserted comes out clean. I tend to err on the not quite done side because it looks so scrumptious and golden but be patient and let it cook longer if it needs it. The browning on the outside is the best part anyway!
When it is done, allow to cool in pan on a wire rack before removing to a serving plate.
There's nothing quite as beautiful as a loaf of homemade bread.
Slice and enjoy with some butter, Nutella, or honey and a glass of milk!
