Easy Russian Chicken

Looking for an easy chicken dish that only requires a few ingredients, but is so tasty? This chicken recipe has been in our family since I can remember, and it couldn't be easier! Serve it alongside some rice and use the extra sauce to pour over it, or just eat the sauce by the spoonful.....yes, it's that good. Kids of all ages will devour this family-friendly dinner.


 

Easy Russian Chicken

Serves 4


4 boneless skinless chicken breasts, or 10 chicken tenderloins

1/2 cup Russian dressing

1/2 cup apricot jam

1/2 packet onion soup mix (Goodman's is gluten free)


Preheat oven to 350°F. Place chicken in a greased baking dish. In a mixing bowl, stir together the dressing, jam, and soup mix until combined. Pour over the chicken to coat. Cover the baking dish with foil. Bake for 1 hour, removing the foil for the last 20 minutes. (If using tenderloins, baking time will be 45 minutes total). Serve with rice.


 

Step-by-step tutorial:


Gather your ingredients. You will need 4 chicken breast or 8-10 tenderloins, Russian salad dressing, apricot jam, and onion soup mix. Easy list of ingredients, huh? In a mixing bowl, combine 1/2 cup Russian dressing, 1/2 cup apricot jam, and 1/2 package of onion soup mix.


Stir until smooth.


Place chicken in a greased baking dish. Pour the sauce over the chicken.


Be sure to cover all the chicken pieces. Cover with foil and bake at 350°F for 1 hour, removing the foil for the last 20 minutes. This helps the sauce thicken a bit.


It makes the chicken so tender and flavorful!


Serve alongside some white rice, and you've got yourself an easy family dinner that takes hardly any prep time at all. The oven does all the work!
