Potato Kielbasa Skillet

Don't we all need more one-skillet-ready-in-30-minute dinners? This is a favorite! I've had this recipe in my rotation for over 10 years now, and it tastes great every time. It uses a smoked kielbasa, red potatoes, and spinach with a very tasty glaze. Of course, I still have kids who eat AROUND the "green stuff", but I personally enjoy wilted spinach and know the goodness that comes from eating it! Oh, and there is bacon in there too. Yes! I like to serve this with a bowl of vanilla yogurt topped with berries and granola. It's a well-rounded and satisfying meal!


 

Potato Kielbasa Skillet

Serves 4-5


1 lb. mini red potatoes, cut into bite-size pieces

3 tablespoons water

1 (14 oz.) smoked kielbasa, cut in half lengthwise, then sliced

1/2 cup chopped onion

1 tablespoon olive oil

2 tablespoons brown sugar

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1/2 teaspoon dried thyme

1/4 teaspoon black pepper

4 cups fresh baby spinach

8 bacon strips, cooked and crumbled


Place the potatoes and water in a large microwavable bowl. Cover with plastic wrap, and cut a few slits in top to let steam vent. Microwave on high for 4-5 minutes until tender. Drain. In a large skillet, saute kielbasa and onions in oil until onion is tender. Add the potatoes; saute 3-5 minutes or until kielbasa and potatoes are lightly browned. Combine the brown sugar, cider vinegar, mustard, thyme, and pepper; pour into skillet. Stir to coat all evenly. Bring to a light boil, then reduce heat to a simmer. Add bacon and spinach; cook and stir until spinach is wilted.


 

Step-by-step tutorial:


Gather your ingredients. You will need a smoked sausage, red potatoes, an onion, baby spinach, cooked bacon, brown sugar, apple cider vinegar, Dijon mustard, and thyme.


In a microwavable bowl, combine the cut potatoes and 3 tablespoons water. Cover with plastic wrap, make a few slits in it to let the steam vent, and microwave on high for 4-5 minutes or until tender. Drain and set aside.


Prepare your other ingredients by cutting the kielbasa in half lengthwise, then slicing. Cut 8 slices cooked bacon and dice the 1/2 cup onion.


For the sauce, in a small bowl combine 2 tablespoons brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1/2 teaspoon dried thyme, and 1/4 teaspoon black pepper. Whisk to combine. Set aside.


In a large skillet, heat some olive oil over medium heat. Add the kielbasa and onion; sauté until onion is tender.


Add the potatoes to the skillet. Turn the heat to medium-high and saute until the kielbasa and potatoes are browned.


Pour on the sauce and bring to a boil. Turn the heat to low and simmer for a few minutes, uncovered.


Add the bacon......


.....and the 4 cups baby spinach.


Continue to cook and stir until the everything is heated through and the spinach is wilted.


Serve and enjoy this great all-in-one meal!
