Crispy Ice Cream Dessert


A summer dessert that will please everyone! It's easy to put together, then you just pull it out of the freezer, slice it, and top it. We love it with strawberry sauce. Wait until you taste the crispy bottom and top of this! I'm almost tempted to double it just because it's so incredible.


 

Crispy Ice Cream Dessert

Serves 12-16


1/2 gallon vanilla ice cream, softened

1 cup brown sugar

1/2 cup crushed walnuts or pecans

2 cups GF crisp rice cereal

1 cup coconut

1/2 cup butter (1 stick), melted


Combine everything except ice cream. Spread half of mixture on in bottom of 9x13-inch dish. Spread softened ice cream on top of crust, forming a 1-inch layer. Press lightly. Top with remaining crispy mixture; press lightly. Freeze. Cut into squares and serve with caramel or fruit topping.


 

This recipe from my grandma is one I grew up enjoying. It's easy, and so, so good in the summer! With the red strawberry topping, it feels very patriotic, so it is fun to serve for holidays like Memorial Day or 4th of July. The mixture of brown sugar, nuts, cereal, coconut, and butter is tremendous. I could eat it by the spoonful. It freezes really well which makes for easy cutting.


You could try this with different ice cream flavors, or even substitute oats or crushed pretzels for the nuts. We love it with pecans! Once it's prepared, you can keep it covered in the freezer until serving, then take out and slice into squares.


For the strawberry sauce, I just slice strawberries and add some sugar. Stir often, and it eventually makes it's own juices and becomes the perfect topper. It would be so good with caramel or even chocolate sauce tooI hope you'll try it this summer!
