Baked chicken with mashed potatoes and gravy is wonderful comfort food, but can get a little boring. This recipe makes the most scrumptious gravy you'll ever eat! It really only requires a few simple ingredients, but the combination is creamy and just perfect. You can use chicken breasts or tenderloins, and serve it with mashed potatoes or rice. Any way you try it, you will be surprised at just how much your family loves it!!
Creamy Mushroom Chicken
4 boneless skinless chicken breasts, or 12 chicken tenderloins
1 box (2 packets) Lipton Onion Soup Mix
2 cups heavy cream
2 cups sliced fresh mushrooms
Preheat oven to 350°F. In a shallow dish, pour both soup mix packets and give a stir. Grease a 9X13 " baking dish. Dip each chicken piece into the soup mix, coating all sides, then place in the baking dish. Pour heavy cream around the chicken. Cover with foil and bake for 30 minutes. Uncover and add the sliced mushrooms; stir to get the mushrooms down into the cream. Recover and bake for another 10 minutes. Remove foil and bake last 10 minutes uncovered (total baking time is 50 minutes). Serve chicken with mashed potatoes or rice, and use the mushroom cream as gravy for all.
Gather your ingredients. You will need chicken, heavy cream, Lipton Onion Soup Mix, and fresh mushrooms.
Preheat oven to 350°F. Pour both packets of the soup mix into a shallow dish.
One by one, coat the chicken pieces in the soup mix, coating all sides.
Transfer to a greased 9X13" baking dish.
Pour 2 cups heavy whipping cream over and around the chicken.
Cover the dish with foil and bake for 30 minutes.
Remove and add 2 cups freshly sliced mushrooms. Stir the mushrooms into the cream. Recover with foil and bake 10 minutes.
Remove the foil for the last 10 minutes of baking time. The total baking time is 50 minutes.
Serve straight to the table alongside either mashed potatoes or rice.
