Cornbread with Honey Butter

Cornbread hot from the oven and slathered with honey butter anyone? Yes, please! This cornbread is the perfect consistency and has tremendous flavor. Many cornbread's are made from mixes, but this is just as simple, and more tasty! The buttermilk and butter are the key elements to it's goodness. As my youngest son says, "Is this the cornbread without the corn?" because he doesn't realize the cornmeal is what makes it cornbread. He's just worried about having a vegetable in his bread. 😂 Served with a bowl of soup, this is divine!


 

Cornbread

Serves 6-8


1/2 cup butter, melted

2/3 cup sugar

2 eggs

1 cup buttermilk

1/2 teaspoon soda

1 cup yellow cornmeal

1 cup GF all-purpose flour (I use Cup4Cup)

1/2 teaspoon salt


Preheat oven to 350°F. Combine all ingredients in a mixing bowl until smooth. Pour into a greased 8X8" baking dish and bake for 30 minutes. Serve warm with honey butter.


Honey Butter

Makes 1 cup


1/2 cup softened salted butter

1/3 cup honey

1/3 cup powdered sugar


Put all ingredients into a mixing bowl and beat for 3-5 minutes with whisk attachment until fluffy. Serve at room temperature. Store in refrigerator.


 

Step-by-step tutorial:


For the cornbread, gather the following ingredients: 1/2 butter, melted, 2 eggs, 1 cup buttermilk, 2/3 cup sugar, 1 cup cornmeal, 1 cup gluten free flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon salt.


In a mixing bowl, add the melted butter and sugar. Stir to combine.


Add the eggs and buttermilk; combine.


Add the cornmeal....


gluten free flour.....


baking soda and salt.


Stir until a smooth batter. Pour into a greased 8X8" baking dish. Bake at 350°F for 30 minutes or until edges are golden and center is puffed up a little.


This smells amazing when you pull it from the oven! Slice and serve with honey butter!


For the honey butter, you will need 1/2 cup salted butter (1 stick), 1/3 cup honey, and 1/3 cup powdered sugar. I'm spoiled because my dad and brother have beehives and send me raw honey every year. It is the BEST.


Add ingredients to a mixing bowl.


Beat for 3-5 minutes until fluffy and light.


It's such a treat! Put it on toast, bagels, or this cornbread and you'll be sure to show your family some love.
