If you are a fan of peanut butter and chocolate, then this cake is one should try! It has peanut butter mixed into the cake batter, giving it a subtle, but delicious flavor. It's also baked with marshmallows along the bottom that bake up into the cake and make it gooey and sweet. I'm always down for a chocolate cake variation to try, and this one is a winner!
Chocolate Peanut Butter Cake
Makes a 9X13" pan
1 (18 oz.) package chocolate cake mix (for gluten free, I recommend Krusteaz)
1 1/4 cups water
3 eggs
3/4 cup peanut butter
1/3 cup vegetable oil
2 cups miniature marshmallows
1 cup semisweet chocolate chips
Preheat oven to 350°F. In a large mixing bowl, beat together the cake mix, water, eggs, peanut butter, and oil until smooth. Grease a 9x13" baking pan, then spread marshmallows along the bottom. Pour the cake mix over the marshmallows and carefully spread across the top. Sprinkle with the chocolate chips. Bake for 25-30 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
Step-by-step tutorial:
Gather your ingredients. You will need a cake mix that makes a 9x13" cake (for gluten free I recommend Krusteaz), water, 3 eggs, vegetable oil, peanut butter, miniature marshmallows, and chocolate chips.
In a large mixing bowl, add the cake mix, 1 1/4 cups water, 3 eggs, 1/3 cup oil, and 3/4 cup peanut butter.
Beat until smooth. It will be a thick batter.
Grease a 9x13" pan and cover the bottom with 2 cups miniature marshmallows. Carefully pour the cake batter over the marshmallows and smooth to even out. Sprinkle with 1 cup semisweet chocolate chips.
Bake at 350°F for 25-30 minutes, or until set and toothpick inserted comes out clean. Cool on a wire rack.
It's so delicious warm, so be sure to eat a slice that way. The marshmallows give it a gooey, sticky bottom and the peanut butter flavor is just enough, but not overwhelming.
