My grandma used to make brownies similar to this, so it makes me so happy to recreate them gluten free! When I gave the first piece to my son, he said, "Mom, you just took brownies to a whole new level!" I think that is a stamp of approval right there. They are rich, covered in melted marshmallows and the best chocolate frosting there is! Served with a scoop of ice cream, they really hit the spot and will make dessert something extra special.
Chocolate Marshmallow Brownies
Makes an 8x8" dish (9 brownies)
1 package of your favorite gluten free brownie mix
Ingredients to prepare brownie mix
1/2 (10 oz.) bag miniature marshmallows
Chocolate frosting:
1/4 cup butter, softened
1 teaspoon vanilla
1/8 cup milk
1 1/2 tablespoons cocoa powder
2 cups powdered sugar
Prepare brownie mix according to package directions. Bake until toothpick inserted in center comes out clean. Pour the marshmallows over the top and spread to cover the brownies. Put the pan back in the oven at 350°F for about 3 minutes more to melt the marshmallows. Cool completely, then frost with the chocolate frosting.
To prepare frosting, put all ingredients into a mixing bowl and beat until smooth. You can add more milk or powdered sugar to get desired consistency.
Step-by-step tutorial:
Gather your ingredients. You will need your favorite brownie mix (we love the Great Value mix - it's so yummy!), marshmallows, butter, cocoa powder, powdered sugar, vanilla, and milk. If your brownie mix makes a 9x13" pan of brownies, just use the entire bag of marshmallows and double the frosting recipe!
In a large mixing bowl, prepare the brownie mix according to package directions.
Pour it into a greased pan or line it with nonstick foil or parchment. Nonstick foil is my favorite for brownies. Makes them so easy to pull out onto a cutting board and cut.
Bake according to package directions.
After removing brownies from the oven, cover with the marshmallows.
Return to the oven and bake at 350°F for an additional 3 minutes to melt the marshmallows. Allow to cool completely before frosting.
To prepare frosting, in a mixing bowl combine 1/4 cup softened butter, 1 1/2 tablespoons cocoa powder, 1 teaspoon vanilla, 1/8 cup milk.....
.... and 2 cups powdered sugar. Beat until smooth.
You want a nice thick frosting, so add more milk or powdered sugar to get desired consistency. Frost the cooled brownies on top of the marshmallow layer.
Cut and serve! We love them warmed a little with a scoop of ice cream. Heaven!
