Birthday cake may be traditional, but I have a daughter who chooses these Baked Cookie Cups every year for her birthday. We all look forward to it because they are out of this world! You simply bake some chocolate chip cookie dough in a ramekin, then top with ice cream, hot fudge, and caramel sauce! The warm gooey cookie together with the cold ice cream and hot toppings really are heaven. Super easy too, especially if you make the cookie dough from a mix. You may be about to give up birthday cake yourself!
Baked Cookie Cups
Makes desired servings
Chocolate chip cookie dough
Vanilla ice cream
Hot Fudge Sauce (this recipe is our favorite)
Caramel Sauce (this recipe is our favorite)
Preheat oven to 350°F. Fill ungreased ramekins about 1/2 full of cookie dough. Place ramekins on baking sheet. Bake for 15-18 minutes or until golden on the edges but soft in the middle. Remove from the oven and allow to cool for 5 minutes. Top with ice cream and drizzle with hot fudge and/or caramel sauce.
Preheat oven to 350°F. Prepare your favorite chocolate chip cookie dough. We love Betty Crocker Chocolate Chip Cookie Mix or Sweet Lorens. You can also make a homemade dough for this.
Press cookie dough into ungreased ramekins. Fill them about half full. Place all the ramekins on a baking sheet and put in oven.
Bake for 15-18 minutes or until the edges are golden and the center is still soft. Allow to cool about 5 minutes before serving.
To serve, top with a scoop of ice cream, any flavor. We love it with vanilla!
Go ahead and add a birthday candle too. It works and you won't even miss the cake.
Dig into the gooey warm cookie combined with the cold ice cream and warm toppings. It doesn't get much better than this!
