4th of July Cheesecakes


For a fast, fun, and festive 4th of July dessert, you should make these yummy little no-bake cheesecakes! They are a huge hit and couldn't be easier to make. I love holiday foods almost as much as I love cheesecake, so combining the two seemed the logical choice!

 

4th of July Cheesecakes

Serves 6


28 gluten free vanilla wafers or 12 white sandwich cookie of choice

3 tablespoons butter, melted

Blue food coloring

1 (8 oz.) package cream cheese, softened

1/4 cup sugar

1/2 teaspoon vanilla

1 teaspoon lemon juice

2 cups frozen whipped topping, thawed

1 (21 oz.) can cherry pie filling


To make the blue cookie base, pour cookies into a food processor and pulse to get fine crumbs. Add melted butter and drops of blue food coloring to get desired color. Pulse until combined. Equally divide between 6 dessert cups, pressing down to an even layer.


For cheesecake layer, beat cream cheese and sugar until light and fluffy. Add vanilla and lemon juice and beat another minute. Add whipped topping and beat until just combined. Spoon into a pastry bag and equally pipe on top of the cookie layers.


Top all with desired amount of cherry pie filling. Refrigerate until ready to serve.


 

Step-by-step tutorial:


Gather your ingredients. You will need gluten free white colored cookies, so you can use vanilla wafers or another cookie of choice. We made ours with Goodie Girl Birthday Cake sandwich cookies and loved it! You also need butter, blue food coloring, cream cheese, sugar, vanilla, lemon juice, frozen whipped topping, and cherry pie filling.


To make the base layer, in a food processor, pulse the cookies until you have fine crumbs. Add the melted butter and combine. Add drops of blue food coloring until you get desired color. Press equally into 6 dessert cups.


For the cheesecake layer, beat cream cheese and sugar until light and fluffy. Add the vanilla and lemon juice and beat for a minute, then add the whipped topping. Beat until just combined.


Put the cheesecake layer into a piping bag to make it really easy to add to the dessert cups.


Top each base with a layers of cheesecake filling. I used a spoon to flatten the filling and push it to the sides so it makes a nice even layer. Then top with spoonful's of cherry pie filling to get a nice red layer. There you have it...... red, white, and blue!


Not only is this dessert fun and festive (wait until you get the ooh's and ah's) but it is so delicious. People will be begging for more. I topped mine with little American flags too. You can get them on Amazon. Happy 4th of July!
